Long Macaroni Vegetable Kashmiri

Ingredients:

Mixed vegetables 400 gms (Cauliflower, Potatoes (steamed till done) Peas, Carrots and French Beans)
Savorit Long Macaroni 200 gms.
Paneer 100 gms. cubed
Tomatoes (each cut into 4 pieces) 2-3 no.
Onion (minced fine) 1 no.
Curd 1/4 cup
Cashewnuts 50 gms.
Raisins 50 gms.
Fresh cream 50 gms.
Fresh cream (whipped) 50 gms
Pineapple 2 slices
Chilli Powder 1 tsp
Salt and sugar to taste.

To grind:
Ginger 1 inch piece
Garlic 8 flakes
Red Chillies 4-5 no.
Khus Khus 2 tbsp
Jeera 1 tsp.
Coriander Seeds 1 tsp.
Cinnamon 1 small piece
Cloves 2 no.
Cardamom 3 no.
Ghee for frying

Cooking time: 45 min

Method:

  • Cook Savorit Long Macaroni according to instructions on pack.

  • Heat ghee and fry the cashewnuts and raisins.

  • Remove and keep aside.

  • Fry the paneer and keep aside.

  • Remove excess ghee.

  • In the remaining ghee fry the onions to a pale golden colour.

  • Add tomatoes, ground masala paste, curd and chilli powder. Fry well.

  • Add the vegetables, cashewnuts, raisins and fried paneer. Stir well.

  • Add salt and sugar to taste and cook for a few minutes.

  • Add pineapple segments and fresh cream.

  • Stir and remove from heat.

  • Place the Savorit Long Macaroni In a serving dish.

  • Pour the vegetable Navaratna over it.

  • Garnish with whipped cream, cashewnuts, raisins and serve immediately
